Happy Cinco de Mayo! If you are anything like me you honor special days with certain foods, and what better excuse for Mexican cuisine than May 5th? I stumbled upon avocado salad at my local market and looked for a similar recipe on line. See the result of my sighting, my search, and my own personal touch below! You will love it…but your kids probably won’t.
*2 ripe avocados pitted, peeled, and cut into thin wedges
*2 vine ripe tomatoes cubed
*1 1/2 TBS extra virgin olive oil
*1/2 green onion sliced very thin
*juice of 1 lime
*1-2 TBS fresh chopped cilantro
*pinch of salt
*dash of black pepper
Combine all ingredients. Serve cold as a side dish, or on its own. For added flavor and bulk add beans, sliced chicken, or shrimp. As avocados brown this dish won’t last very long, so make only as much as you need. Ole’!
